This is what you’ll need

Carrots: 2 (small)

Pineapple slices: 5

Green chilli: 1/4

Lemon juice: 1/2tsp

Sugar: 1tsp (optional)

Coriander leaves: To garnish

Lemon wedges: For garnishing

Let’s get cooking

1. Peel the carrots and cut into pieces, along with the pineapple slices.

2. Deseed the green chilli.

3. Puree the carrots, pineapple slices and green chilli in a blender, adding sugar if required.

4. Serve in a glass with ice, garnished with a dash of lime and coriander leaves.

Approximate preparation time: 5 minutes.

Dietician’s Note

Carrots are an excellent source of minerals and vitamins, especially Vitamin A.

Pineapple is an excellent source of vitamin especially Vitamin C, minerals like potassium which is beneficial to people suffering from hypertension.

Both carrot and pineapple are good sources of fibre, which help in relieving constipation.
